Day 1 Arrive Chiang MaiThis dynamic and modern city has successfully managed to combine its rich history and traditions with its increasingly modern side, making it an ideal base to discover Thailand's north. Perhaps get an introduction to Thai cuisine at the Night Bazaar, where an array of local foods are on offer - from fiery chili-encrusted sausages to super-spicy dry curries. Day 2 Cooking SchoolStart the day with a visit to a local food market to learn about the wealth of ingredients used in Thai cuisine. After picking up supplies of fresh-picked herbs and vegetables, head to the interactive classroom to learn about the secrets of Thai cooking. Get an introduction to essential Thai ingredients, including how to store and prepare them and what to use when recreating the recipes at home. Pick up a mortar and pestle to make traditional Thai pastes and master the art of preparing a kantok feast. The course covers all the favourites, including Pad Thai and Thai curries, while introducing participants to a number of less known - and equally delicious - dishes. A cooking demonstration is followed by a tasty lunch of all the day's creations. Sit down cross-legged (men) or with legs demurely folded (ladies) and enjoy the hard work over a long meal. Day 3 Depart Chiang MaiThere's time for some last minute shopping, a wander through some of the fascinating temples, a climb up to Wat Phra That Doi Suthep or a visit to the fascinating Tribal Museum.
